As an Israeli family-owned brand, we may be a little biased towards this infamous street food. It has all the components of a perfect sandwich: a jammy egg, savory eggplant, pickled veg... try it yourself in a fluffy Angel's pita!
Ingredients
(makes 4 sandwiches)
1 cup cherry tomatoes, halved
1 large cucumber, diced
1 cup shredded cabbage
1 small eggplant
2 tbsp chopped parsley
1/2 cup Israeli pickles
1/2 lemon
4 large eggs
Amba sauce
1 tablespoon olive oil
2-4 Angel Bakeries Pitas
Get a small saucepan boiling and then turn off the heat. Place your eggs in the saucepan and cover. Let sit for 6 minutes and remove with a slotted spoon. Place in an ice bath, then peel once cooled.
Salt & slice your eggplant into 1/4 inch thick round slices. Heat the olive oil over medium heat and place the eggplant slices into the pan. Cook for about 5-7 minutes, flipping halfway through. Place on a paper towel while you prepare your pitas.
Combine the tomatoes, cucumber, cabbage, parsley and Israeli pickles. Squeeze half a lemon over the vegetables and toss.
Combine all the ingredients in a pita, drizzle with amba sauce, and enjoy!
*Amba is a sauce made from pickled mango, and Israeli pickles, which is available from international and Israeli grocers and online.
