This is our new favorite fall grilled cheese, with balanced flavors of sweet and savory. Plus, it's kind of healthy, right?
For the Sweet Potato Slices:
2 medium-sized sweet potatoes, peeled and thinly sliced
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon fresh rosemary, chopped
For the Charred Red Onions:
1 large red onion, thinly sliced
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon fresh rosemary, chopped
For the Kale:
2 cups fresh kale leaves, stems removed and torn into small pieces
2 tablespoons olive oil
Salt and pepper to taste
For the Grilled Cheese:
2 Angel Bakeries pitas
4 slices of your favorite cheese
2 tablespoons butter, for grilling
Instructions:
Prepare the Sweet Potato Slices:
Toss the thinly sliced sweet potatoes in olive oil, salt, pepper, and chopped rosemary to coat them evenly.
Heat a large skillet over medium-high heat and add the sweet potato slices.
Cook for about 3-4 minutes per side until they are tender and slightly charred. Remove from the skillet and set aside.
Char the Red Onions:
In the same skillet, add the olive oil and red onion slices.
Cook the onions over medium-high heat until they become soft and start to char, about 5-7 minutes.
Season with salt, pepper, and chopped rosemary. Stir well and remove from the skillet.
Sauté the Kale:
In the same skillet, add the olive oil and kale leaves.
Sauté the kale until it wilts and becomes tender, about 2-3 minutes.
Season with salt and pepper. Remove from the skillet.
Assemble the Grilled Cheese:
Butter the outside of the pita half.
Place a slice of cheese in the pita.
Layer the sweet potato slices, charred red onions, sautéed kale, and another slice of cheese on top of the cheese.
Grill the Sandwiches:
Heat a clean skillet over medium heat and add the assembled sandwiches.
Grill each side until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
Serve and Enjoy:
Cut the grilled cheese sandwiches in half and serve hot.
