When a salad on its own is not enough, you can make it a satisfying meal with pita! This has all the best qualities of a salad - crunchy radishes and cucumbers, smooth and briny roasted red peppers, and a tartness from vinaigrette. Enjoy!
Ingredients
Rotisserie chicken
1 jar roasted red peppers
1 cup walnuts, roughly chopped
½ lb mixed greens
1 large fennel bulbs, thinly sliced
1 cup radishes, thinly sliced
2 pitas, halved
Dressing
¼ cup white wine vinegar
2 tbsp honey
1 tbsp Dijon mustard
½ cup extra virgin olive oil
Instructions
Prepare the fennel, radishes, and roasted peppers, finely slicing them.
Shred the rotisserie chicken, put in a bowl with all the vegetables and the walnuts.
Mix dressing and toss salad. Place salad in the pita and enjoy!
