Shrimp Fattoush Pita

Fattoush is a Lebanese salad that typically has torn, crisped pita in it for crunch and texture. We decided to try the salad in a pita instead, and it was delicious! There is enough of a crunch from the vegetables to satisfy anyone. And if you're feeling adventurous, add some of your favorite herbs to the dressing, like mint!





Ingredients

1 large head romaine lettuce, chopped

1 cup of diced tomatoes

1 cup of diced cucumbers

1 cup of diced green peppers

1 cup of diced radishes

1 lb of cleaned shrimp, tails removed

Dressing

1/3 cup extra-virgin olive oil

1/4 cup freshly-squeezed lemon juice

1 large clove garlic, pressed or minced

1 teaspoon sea salt

1 teaspoon ground sumac

Prepare all your vegetables, dicing and chopping to the size that you desire. Mix together your dressing ingredients and toss with the salad. Set aside.


Season your shrimp with salt and pepper, getting a nice toasty char on both sides in a cast iron pan.

Mix your shrimp in with the salad and toss again. Fill up your pita, and enjoy!
